Soba is the Japanese word for buckwheat. This variety is made from 100% buckwheat and is therefore 100% gluten-free. Interesting, as making buckwheat noodles elastic is a real art. Our Japanese noodle producer can do this like no one else. The Japanese often eat soba in a stock or miso soup or combine it with fish, meat or vegetable dishes.
