The higher the type number of a flour, the higher the proportion of the outer layers of the grain that are milled and thus contained in the flour. These outer layers primarily contain the grain's minerals. The mineral content is approximately half that of whole-wheat flour. This wheat flour contains 1050mg of minerals per 100g of flour.
